1 cup plain yogurt
2 tablespoons ginger-garlic paste
2 green chilies, sliced
1/2 cup fresh coriander, chopped
1/2 cup fresh mint leaves
1/4 cup cooking oil or ghee
1 tablespoon lemon juice
1 teaspoon red chili powder
1/2 teaspoon turmeric powder
1 teaspoon coriander powder
1 teaspoon cumin seeds
1 teaspoon garam masala
1 small cinnamon stick
3–4 green cardamom pods
4–5 cloves
1 bay leaf
Salt to taste
For the Rice
Water for boiling
Salt to taste
1 bay leaf
3–4 green cardamom pods
1 small cinnamon stick
For Garnishing
A few fresh mint leaves
Chopped fresh coriander
A few drops of yellow food coloring mixed with water, optional
Fried onions, optional
Step-by-Step Instructions
Step 1: Wash and Soak the Rice
Wash the basmati rice thoroughly until the water becomes mostly clear. Soak it for 20–30 minutes, then drain.
Step 2: Fry the Onions
Heat oil or ghee in a large pot. Add the sliced onions and fry until golden brown. Remove a small portion for garnishing if desired.
Step 3: Prepare the Chicken Masala
Add the cinnamon, cardamom, cloves, cumin seeds, and bay leaf to the remaining oil. Stir briefly until fragrant.
Add the ginger-garlic paste and cook for about one minute. Add the chicken and fry until its color changes.
Mix in the tomatoes, yogurt, red chili powder, turmeric, coriander powder, and salt. Cook until the tomatoes soften and the chicken masala thickens.
Step 4: Add Fresh Herbs
Add the green chilies, chopped coriander, mint leaves, lemon juice, and garam masala. Cook until the chicken is nearly tender and the masala is flavorful.
The gravy should be thick but moist enough to keep the biryani from becoming dry.
Step 5: Boil the Rice
Bring a large pot of water to a boil. Add salt, bay leaf, cardamom, and cinnamon.
Add the soaked rice and boil until it is approximately 70–80% cooked. The grains should be partly firm because they will finish cooking during the final steaming.
Drain the rice carefully.
Step 6: Layer the Biryani
Spread the chicken masala evenly across the bottom of a heavy-bottomed pot.
Add the partially cooked rice on top. Sprinkle the reserved fried onions, fresh mint, coriander, and optional yellow food coloring over the rice.
Step 7: Steam the Biryani
Cover the pot tightly. Cook over low heat for approximately 20–25 minutes, or until the chicken is fully cooked and the rice is tender.
If the pot is thin, place a heat diffuser or flat pan underneath to prevent burning.
Step 8: Serve and Enjoy
Gently mix a portion of the rice with the chicken without breaking the grains.
Serve your hot Pakistani chicken biryani with raita, fresh salad, and lemon wedges.
